Banana Bread Muffins

½ cup Three Rivers Farm Maple Syrup
5 Tbs. canola oil
2 eggs
2 mashed bananas
1 teaspoon vanilla extract
1 ⅔ cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
1. Heat oven to 375 and spray muffin tins.
2. Whisk together syrup, oil, and eggs
3. Add bananas and vanilla, whisk to combine
4. Add flour, soda, salt and cinnamon
5. Fill muffin tins 3/4 of the way and place in the oven for 18 min

To make them a bit sweeter, dip each muffin in melted butter and sprinkle with a cinnamon-sugar mixture.
